Special request I had for a Birthday - had fun with this one! Chocolate cupcakes, studded with crushed thin mint cookies, topped with a swirl of mint buttercream and half a thin mint cookie! Good enough to make any Girl Scout proud! ;)
If I remember correctly, I just used my traditional buttercream recipe and changed out vanilla flavoring for peppermint flavoring: 2 cups softened unsalted butter, 2 lbs sifted powdered sugar, 1/4 tsp salt, 1 tsp peppermint flavoring and 1/4 cup buttermilk. Whip your softened butter using a paddle attachement, slowly adding the powdered sugar until all has been used, add salt, flavoring and buttermilk and whip until fluffy.
